Pizzaiolo (Full-Time)

POSITION SUMMARY Brooklyn Brewery is seeking a talented and driven Pizzaiolo to support our new pizza program under the Pizzaiolo Chef. Our mission is simple yet ambitious: to create unforgettable food and beer experiences that bring people together. This is a unique opportunity to support a premier pizza operation from the ground up. We are searching for a Pizzaiolo with experience in pizza craftsmanship, fermentation science, production systems, and high-volume execution. The successful candidate will work side-by-side with the pizza team every day, support all aspects of dough production, pizza making and daily operations under the vision of the Executive Chef and Pizzaiolo Chef.
DUTIES AND RESPONSIBILITIES Candidates should be comfortable performing a range of tasks and duties, including but not limited to:
- Supporting all aspects of the pizza department.
- Work daily on the pizza line, including dough production, stretching, topping, baking, and expediting during service.
- Manage a high-volume pizza operation utilizing four pizza ovens.
- Help develop and maintain exceptional pizza dough with knowledge of:
- Fermentation
- Hydration
- Mixing techniques
- Dough management
- Cold fermentation and proofing
- Scaling and production planning.
- Manage daily, weekly, and long-term dough production schedules.
- Maintain consistency and quality throughout every stage of production.
- Support the Executive Chef and Pizzaiolo Chef on menu development, seasonal features, and special events.
- Assist in the development of pizzas that celebrate both timeless classics and internationally inspired flavors.
- Label, date, and rotate product using FIFO.
- Maintain the highest standards of food quality, sanitation, organization, and execution.
- Responsible for cleaning the workstation and working clean in an open pizza station environment.
- Available for morning dough production shifts and evening service shifts based on production and service needs.
- Follow NYC Department of Health food safety and sanitation standards.
WORK SCHEDULE Days of Operations: Wednesday – Monday, closed Tuesdays
Variable hours and include evenings, weekends, and holidays based on business needs
QUALIFICATIONS - Passion for pizza and continual learning.
- Minimum of 2 years of pizza-making experience.
- Strong experience operating gas-fired and electric pizza ovens is expected. Familiarity with wood-fired and hybrid ovens is a plus but not required.
- Strong hand-stretching skills and an understanding of dough fermentation.
- Ability to produce consistent pies quickly during high volume.
- Ability to remain calm, organized, and focused in a fast-paced environment.
- Comfortable working near high heat for long shifts.
- Able to stand for long shifts and lift up to 50 lbs. (flour bags, wood, dough boxes).
- Able to work a flexible schedule across Monday through Sunday work week as needed.
- Reliable, punctual, and calm under pressure.
- Keep positive and "how can I help the system" mentality.
- Able to communicate with guests expressing curiosity about our food product.
- Candidates with experience in naturally leavened doughs, long fermentation, sourdough cultures, regional Italian pizza styles, or competition-level pizza programs are especially encouraged to apply.
- NYC DOHMH Food Protection Certificate a plus.
- Bilingual English/Spanish skills are a plus but not required.
- Must be at least 18 years of age.
COMPENSATION The base pay range for this full-time role is $20.00 to $24.00 per hour. Actual base pay may vary depending on factors including but not limited to experience, subject matter expertise, and skills. The base pay is one component of The Brooklyn Brewery Corporation’s total compensation package for employees.
